1: Chop the onion and garlic and saute over a low heat. 2: Add the pea pro balls, chopped tomatoes, a little salt & pepper, cover the pan and cook for about 20 minutes. 3: After 10 mins add 2 tablespoons of Aubergine & Basil Paste to the pan of tomatoes and simmer for the next 10 minutes with the lid on, stirring regularly so the paste binds together with the tomato. 4: In a separate pan, boil plenty of water for the spaghetti. As it comes to the boil, add some salt and the spaghetti. 5: Once the spaghetti is cooked, mix with the sauce and stir well. Serve with some freshly chopped basil.
COURGETTE SPAGHETTI WITH BEET BITES & PESTO SAUCE
INGREDIENTS: Serves 1
Whole Creations Gluten Free Beet Bites 2 Courgettes Green Pesto 1 tablespoon of Olive Oil 2 tablespoons of Water
1: Use a spiralizer to make spaghetti out of your courgettes 2: Gently heat the olive oil in a frying pan and cook the courgette in the hot oil for 1 minute. 3: Add the water and contine to cook for another 5 minutes until the courgette has softened. 4: Mix in the green pesto and season with salt and pepper. Top with our delicious Beet Bites.
